Marinated Flank Steak

Prep time: 10 minutes + marinating time
Cook time: 12-20 minutes
Meat
- 6 lbs flank steak
Marinade
- 1 large onion – diced ½”
- ½ cup minced garlic
- 4 tablespoons dry oregano
- 4 tablespoons dry basil
- 2 tablespoons crackled black pepper
- 1 teaspoon chili flakes
- 4 tablespoons paprika
- 1/3 cup sugar
- 2/3 cup red wine vinegar
- 2/3 cup pineapple juice or rice vinegar
- ½ cup oil
Cooking method
- Combine all ingredients to create the marinade, stir well and leave to settle
- Layer steaks with marinade – evenly distribute solids
- Cover and refrigerate overnight
- Remove steak from marinade
- Season evenly with salt and pepper
- Brush or rub with oil
- Sear both side on hot grill and continue cooking to desired temperature
- Remove from heat and allow to rest for 5 minutes
- Slice ¼” bias across grain. Slicing correctly will ensure the best texture
